ANTI-OXIDANT ACTIVITIES OF DIFFERENT TYPES OF INDIGENOUS PITHAS OF ODISHA

Abstract
Odisha have their own traditional food habits. Their traditional food habits are very simple and associated with their
customs and ethos. All types of fermented and non-fermented pithas documented are region-specific and have their
unique substances. Many of the piths are said to have been prepared and served among each other for their unity,
togetherness, integrity, friendship and affection. The utilization of raw materials like parboiled rice, coconut, jiggery,
black gram and microbes associated with it indicates the successful coexistence and convolution of people with
indigenous microbes. Pithas were categorized according to their method of preparation and analyzed. FRAP assay done
using the water extract of all pitha to estimate the total anti-oxidant activity and found that arisa followed by manda and
endure were good in this aspect. This investigation was carried out to find out the best pitha among different types of
pitha prepared in Odisha on the basis of antioxidant scavenging benefits
